Philosophy

At Hallingstuene we are mainly serving game dishes with an honest taste.
This is a big part of Frode & Berits philosophy.
We don’t want to hide the tastes in the main ingredients by preparing it to much
or add too much of other tastes. We want it to taste what it is.

 

We do not want to be called a Gourmet restaurant, but a good food and wine house.

 

Some times we travel with all of our staff abroad, and than especially to France.
The country with great food and wine. This is to get inspiration for new dishes and combinations
to our restaurant.

 

Four to five times a year we change our a la carte menu. But a lot of our game dishes
have become classics that we can’t take of our a la carte menu. After 20 years at Hallingstuene
we have seen what our guests prefer. And that is our classical game dishes with
creamed sauces.

 

Also we are proud to be able to offer traditional dishes from good and local producers.
Some of the things we prepare then is dishes like dried and smoked sheep’s head,
a beautiful smoked meat sausage from Skåra Farm, and we make our own sheep’s
rib in the Christmas time.

And during the summer, almost all of our herbs come from Gerd Åsberg located in Dagali.

Some of our specialities we make after demand, and is not listed in our a la carte menu.
